Pea pesto, cucumber salad and a sunset gif




Yesterday I made a green pea pesto out of frozen peas, a clove of garlic, some fresh basil leaves, pine nuts, salt, lime juice and olive oil. Just thaw the peas and mix it all together and it's ready to eat.

It had been raining most of the day but when I was cooking suddenly there was this beautiful sunset which turned the whole kitchen golden.


I also made this cucumber salad inspired by a picture from Love and Lemons instagram. It's just cucumber, feta cheese, red onion, dill, lime juice and olive oil.

Cabbage and Halloumi salad


All you need plus some olive oil, salt and pepper.


Sundried tomatoes, Halloumi cheese, white cabbage, red onion, lemon, tomatoes and pine nuts.


First I made one of my favorite dressings which is also the simplest one. Just blend together lemon, honey (or even better: agave syrup), salt and pepper. If you want to you can add some Dijon mustard as well.


Then I first chopped the cabbage and started frying it in a pan on medium heat before chopping everything else.


When the cabbage got soft I added the onion and sundried tomatoes. Fry the Halloumi in a separate pan. Then add everything else and top it with the dressing and some fresh herbs. I used parsley.

In the middle of all the cooking an old friend showed up. We decided to call him Patrick!

Aubergine
Minced soy, red onion, spring onion, garlic
Tomato paste, organic veggie bouillon, chipotle, barbecue sauce, salt, black pepper
Grated halloumi cheese
Salad, olive oil



Smoked mackerel
Potatoes, salad, red onion, tomatoes
Balsamic vinegar, wholegrain mustard, agave syrup, salt, pepper
